AN ORDINANCE AMENDING Section 18-5-45 of the Revised Ordinances of
Salt Lake City, Utah, 1965, as amended, governing the quality of eggs.
Be it ordained by the Board of Commissioners of Salt Lake City,
Utah:
SECTION 1. That Section 18-5-45 of the Revised Ordinances of Salt
Lake City, Utah, 1965, as amended, governing the quality of eggs, be,
and the same hereby is, amended to read as follows:
Sec. 18-5-45. Classifications and operations. Shell eggs
shall be sorted and classified as edible, inedible, eggs from
other than chickens, or loss, in a manner set forth in the
Utah State Department of Agriculture Standards. Establishments
such as bakeries, restaurants and other food processing plants
shall use eggs of no lesser grade than Grade B as designated
by Utah State Department of Agriculture Standards. Eggs of
lesser grade and quality than Grade C will not be offered for
sale in Salt Lake City for any use whatsoever. Provided,
however, that eggs graded "dirty" or "checks" may be used in
whole egg slurries, whole egg products or similar egg products
if the outside shell may be cleaned or washed to prevent con-
tamination of the egg meat and the product is then subjected
to pasteurization procedures as outlined by the Utah State
Department of Agriculture Regulations.
SECTION 2. In the opinion of the Board of Commissioners of Salt
Lake City, it is necessary to the peace, health and safety and welfare
of the inhabitants of Salt Lake City that this ordinance become effective
immediately.
SECTION 3. This ordinance shall take effect upon its first
publication.
Passed by the Board of Commissioners of Salt Lake City, Utah, this
