AN ORDINANCE AMENDING Title 18, Chapter 8, Section 21, Revised
Ordinances of Salt Lake City, Utah, 1965, relating to the examination
of milk and milk products.
Be it ordained by the Board of Commissioners of Salt Lake City,
Utah:
SECTION 1. That Title 18, Chapter 8, Section 21, Revised
Ordinances of Salt Lake City, Utah, 1965, relating to the examination
of milk and milk products, be, and the same hereby is, amended to
read as follows:
"Sec. 18-8-21. The examination of milk and milk products.
During any consecutive six months, at least four samples of
raw milk for pasteurization shall be taken from each producer
and four samples of raw milk for pasteurization shall be taken
from each milk plant after receipt of the milk by the milk
plant and prior to pasteurization. In addition, during any
consecutive six months, at least four samples of pasteurized
milk and at least four samples of each milk product defined
in this title shall be taken from every milk plant. Samples
of milk and milk products shall be taken while in possession
of the producer or distributor at any time prior to final
delivery. Samples of milk and milk products from dairy retail
stores, food service establishments, grocery stores, and other
places where milk and milk products are sold shall be examined
periodically as determined by the health authority; and the
results of such examination shall be used to determine compliance
with this title. Proprietors of such establishments shall
furnish the health authority, upon his request, with the names
of all distributors from whom milk or milk products are ob-
tained, and to furnish such samples for laboratory analysis
as may be required.
Required bacterial counts and cooling temperature checks
shall be performed on raw milk for pasteurization. In addition,
antibiotic tests on each producer's milk or on commingled raw
milk shall be conducted at least four times during any con-
secutive six months. When commingled milk is tested, all
producers shall be represented in the sample. All individual
sources of milk shall be tested when test results on the
commingled milk are positive. Required bacterial counts,
coliform determinations, phosphatase and cooling temperature
checks shall be performed on pasteurized milk and milk
products.
